Friends. I’m sorry. I find it so much simper to post a photo to instagram than to publish a blog post. Excuses, excuses, but it has been busy. All that to say for those of you who have requested recipes, I’m extremely delinquent.
Today was another baked oatmeal morning (and this time little buddy and I finished the whole pan ourselves, so if you have a big family definitely double or triple the recipe). Baked oatmeal reminds me of some of my best girl friends because the original recipe came from my friend Julie. Every year at our girls weekend we eat baked oatmeal. It brings me all the happy feelings.
So, without further delay, the recipe (written from memory because yes, I make it that often).
Preheat the oven to 350 degrees.
Combine in a medium bowl (I normally use a fork so the egg gets all mixed up):
- 1/3 cup oil
- scant 1/3 cup brown sugar (or other sweetener, I used maple syrup a few weeks ago when I was out of sugar)
- 1 egg
Stir in dry ingredients:
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 2 cups oatmeal
Last but not least, add:
- 3/4 cup milk (I used whole milk until a dairy issue presented in our family and now it’s vanilla unsweetened almond milk for us)
Spray a pan (I’ve used a loaf pan and a pie dish, either one works), pour in the oatmeal and bake for 22-25 minutes.
Allow to cool and/or make sure your kids know to blow. Enjoy!
