So let’s say that your husband agreed to do Whole 30 with you and it’s made all the difference in the ease of execution. If we can call it ease. I still feel like my time is consumed by finding the next new and exciting recipe constantly but at least we’re in it together. And let’s also say he’s an incredible father to your two children and you want to treat him right on Father’s Day without blowing it on day 20 (we’re so close to reintroducing things and plan to start with grains. I can’t wait to soak up all the balsamic and olive oil goodness I’ve been eating lately with bread). Here’s my plan, which also sneakily involves him in the cooking since so much needs to be grilled:
Sunday: Surf and Turf (aka grilled steak and shrimp), Potato salad (loosely modeled after this recipe but I plan to add in hard boiled eggs), and grilled asparagus.
Monday: Baked Chicken, Vegetable Stir Fry
Tuesday: Applegate Hot Dogs, Roasted Sweet Potatoes, Steamed frozen veggies
And that’s our plan for the week. Wednesday through next Monday we are gone to my in-laws. EK simply cannot wait to swim at the pool in their condo complex. I’m planning to pack a cooler with homemade mayo, clarified butter, and lots of snacks but wish us luck as we try to stay compliant with Whole 30 as we travel and live the guest life.
