As a working mama trying to feed my family well meal-planning is absolutely essential. I need to be sure I have a plan to get things cooking almost the moment we walk through the door to avoid toddler hunger meltdowns. Having a plan also helps us reduce food waste and our food budget.
The recipes I link to are all tried and approved by the Davidson four (my husband Joel, 3 year old EK, 1 year old Buddy and myself).
Tuesday: Beef Tacos
Wednesday: Bourbon Chicken, brown rice (I made extra for Saturday’s meal), steamed frozen veggies
Thursday: Bruschetta Chicken Pasta Salad (Joel grilled the chicken, hooray for a nice day)
Friday: Homemade Pizza
Saturday: Chicken Fried Rice (I cannot recommend this recipe enough. I used to try to wing it but the rice texture was always off. SO GOOD!)
Sunday: Scalloped Potatoes and Ham
