This weekend was so much fun- one of my best friends who moved away a few years ago came to visit with her husband and son. The kids loved playing and after an easy bedtime the adults got to play cards. Hand-and-foot is our favorite card game and I don’t get to play nearly as often as I’d like.
We just finished day 13 of Whole30. The last few days have flown by with all the fun. I’m still experiencing some cravings but overall doing well. All the food prep and planning is a bit more time consuming than I prefer but I am still hopeful that this experiment will help us to figure out how we should eat long term for our best health.
Here’s this week’s menu:
Monday: Spaghetti Squash with Meatballs (I froze the extras from two weeks ago)
Tuesday: BBQ Chicken, Veggie Kabobs, Watermelon (we’re having friends for dinner)
Wednesday: Crockpot Roast with Carrots
Thursday: Taco Salad
Friday: Meatloaf Muffins, Sweet Potatoes, Cauliflower
Saturday: Chinese Dumplings (I’m using the recipe my college friend taught me, substituting the soy sauce for coconut aminos and omitting the wrappers)
